Recipe: Bircher Muesli Rolled Oats

Do not skip breakfast. With this sustaining recipe it is easy to behave.
No cooking required.
The quantity of this batch is sufficient for two people for three days.

Four cups of uncooked rolled oats.
Juice of two lemons.
Two tablespoons of honey.
One cup of plain yoghurt.
One cup of water.
Two grated apples.
Half a cup of sultanas.
Mix it together in a large bowl. Leave it to sit overnight in the refrigerator.

Variations on the fruit. Use preserved or stewed fruit, e.g. blackberries. If there is moisture, then no need for the water ingredient.

Fresh rolled oats is best. We have organic oat kernels (groats) and roll it as required, thereby retaining the good oils. We have an oat roller (flaker) attached to the bench.

When serving, sprinkle some ground nuts. Again, fresh is best so do this using a spice grinder. Keep a reservoir of the nut mix in an airtight jar. About one tablespoon then grind it, is sufficient for two people daily. Sandra Cabot recommends the LSA mix: Linseed (flaxseed), Sunflower, Almond.
